Keto Arroz Carreteiro
Arroz Carreteiro is also known as Wagoners' Rice. The dish originated during the time travelers would carry all of their food and goods. They would combine whatever they had left, like rice, with leftover pieces of beef, garlic, and onion. The beef was usually grilled/barbequed or dried. So you will sometimes see this recipe calls for beef jerky. You can use either beef jerky or leftover beef. To make this a Keto version, we substituted the cauliflower rice for the white rice traditionally seen in this dish. We prefer the cauliflower rice version, which gives the dish a nice texture! What other types of meat could I use?
Instead of beef jerky or leftover beef, you could also consider using cubed pieces of steak. A Latin American-flavored sausage would also be very delicious. Feel free to do a combination of meats!
*Does this dish make for good leftovers?
Yes! Due to the nature of this dish, you can freeze portions in containers for meal prep, or simply reheat them the next day for lunch. Either way, Keto Arroz Carreteiro makes for excellent leftovers.
Do I need to use salt if I use beef jerky?
If using beef jerky, you will want to wait until the end of the cooking to taste and add salt, as some jerky can be on the saltier side. If you use beef jerky, some recipes call for soaking the beef a couple of times before cooking to soften it. If you use this process, some of the salt will be washed off, so you can use a little more salt as needed.

Step 1
Chop the white onion into a fine dice. Mince the garlic well. Then, preheat a medium-sized skillet over medium-high heat until hot. Add in the avocado oil and swirl the pan. Add in the onions and garlic. Stir them until they are lightly browned.Step 2
Next, add the cauliflower rice. We like frozen cauliflower rice as it is simple to use and has already been prepared. However, feel free to use fresh cauliflower rice that you have riced yourself in a food processor or by hand. Stir well until the cauliflower starts to heatthrough. Add in the leftover beef of your choice. Keep stirring the mixture.Step 3
Allow it to cook for a while without stirring to allow some browning. Do this several times to develop some flavor. Sprinkle on the red pepper flakes (if desired). Plate up the rice and sprinkle with fresh chopped parsley.Step 4
Store any leftovers in the refrigerator in an airtight container. Reheat in the microwave or a skillet over medium heat. Enjoy!
