Mozzarella cheese, whole milk
1 cup, shredded
Raw egg
2 medium
Parmesan cheese, fresh (hard)

Almond flour
1 cup
Baking powder
2 tsp
Salt

0.5 cup, crumbled, not packed

Step 1
Add the mozzarella cheese to a bowl. Heat it in the microwave in 20-second intervals. Whisk to make sure that all the cheese has melted.Step 2
To a large bowl, add the eggs and whisk them. Quickly add the melted mozzarella cheese, grated parmesan, almond flour, baking powder, salt, and crumbled blue cheese. Combine all the ingredients using a spatula.Step 3
Shape the dough into a rough ball, and smoothe it with the back of a spatula. Cover the bowl with plastic wrap. Transfer the dough to the refrigerator for 1-2 hours.Step 4
Preheat your oven to 180 Cº/ 350 F. Divide the dough into 12 equal pieces. Roll them into balls, and place them on a baking sheet lined with parchment paper.Step 5
Bake for 15-20 minutes until golden. Remove from the oven and allow to cool for a few minutes. Serve immediately.

Pretty tasty, and the mozzarella and feta, which I used instead of blue cheese weren't evenly distributed through the puffs. I'll likely try this again to see if I can improve results.
