If you don't know what a brigadeiro is, you will be pleasantly surprised to learn that it is a chocolate truffle that is more fudge-like. These truffles are easy and simple to make. Traditionally, brigadeiros are made by combining cocoa powder and sweetened condensed milk. Since sweetened condensed milk is not Keto-friendly, we have adapted this recipe. Instead, we used heavy cream and sugar-free dark chocolate chips to mimic the flavors. The fun thing about brigadeiros is that they are decorated with sprinkles or chopped nuts. So feel free to get creative with them! We used a sugar-free sprinkle for this recipe, but you can substitute that with chopped walnuts, pecans, or pistachios. The best chocolate to use without additional sweeteners is sugar-free dark chocolate sweetened with stevia. Brigaderios come in all sorts of flavors, so feel free to use flavored stevia-sweetened chocolate chips.
The secret to making good truffles
The secret to making truffles is getting the heavy cream hot enough. Hot cream is poured over the chocolate chips, but the trick is to allow the hot cream to sit on the chocolate for a few minutes before stirring. This allows the chocolate to melt perfectly before mixing. Doing so leaves a little bit of unmelted chocolate from the centers of the chips to "seed" the chocolate, so the result is a smooth, not grainy, texture.

Measure out the sugar-free chocolate chips into a medium-sized bowl. We like to use stevia-sweetened chocolate chips. Feel free to use some that are already sweetened.Step 2
Pour the cream into a heatproof measuring glass. Microwave it for one minute. Alternatively, you can heat the cream until a gentle simmer in a small saucepan, then pour it over the chocolate. Allow the heated cream to sit on the chocolate for 3-5 minutes. Do not touch the chocolate until then.Step 3
After the time has passed, stir the chocolate. Some pieces of chocolate will be unmelted, but continue to stir, and they will melt away if your cream was hot enough at the start.Step 4
Place the bowl in the fridge to chill for 1-2 hours. Try not to allow the chocolate to firm up for too long, or it will be too difficult to mold into a ball. Add the sprinkles to a small bowl. Then, take a teaspoon-sized cookie scoop and portion out the chocolate mixture. Roll it into a ball in your hands.Step 5
Then, place it into the bowl with the sprinkles. Roll the ball around to coat it with the sprinkles. Repeat with the remaining chocolate.Step 6
