Keto Zucchini Ribbon Salad with Feta
I love a simple and easy Keto side dish! This one is extremely low carb, yet full of healthy fats. Feel free to up the fats even more by adding a drizzle of olive oil between the layers. Zucchini squash is thinly sliced on a mandolin and then layered into a casserole dish with plenty of feta cheese and salt. Zucchini tends to water out so be sure to serve this dish immediately. If prepping ahead, omit the salt until ready to serve.
What kind of feta should I use?
Please stick to a whole block of feta broken into pieces. I find the flavor to be much better. My favorite variety of feta is Bulgarian feta found in Mediterranean markets.
Can I use other herbs?
Yes! Feel free to substitute the cilantro for chopped parsley, tarragon, chives, and more! Try a combination of herbs to mix it up.
What should I serve with this dish?

Step 1
Use a sharp mandolin to cut a zucchini into strips lengthwise. Place the strips in a single layer into a small casserole dish that fits the length of the zucchini squash. Top with some of the feta cheese and chopped cilantro.Step 2
Repeat with the remaining zucchini strips, cheese, and herbs. Add a pinch of salt to each of the layers if serving immediately. If not, then salt the zucchini at the table. Feel free to add different herbs if cilantro is not your favorite.
