Low Carb Pizza Focaccia Bread

What gives focaccia its unique look are the dimples on the top filled with olive oil and herbs. Step 1
Make sure you use warm water (not hot) to activate the yeast in the recipe. Stir honey into the warm water, then gently stir in the yeast. Leave the yeast water aside for 5-10 minutes until you see the top of the water turn frothy and you can smell the warm yeast. If these reactions don’t occur, you’ll need to start over with new yeast.Step 2
While the yeast is activating, sift together almond flour, coconut flour, xanthan gum, baking powder, and salt in a large mixing bowl. Next, add egg whites to a stand mixer and whip them until they’re very stiff and opaque white. Set the whipped egg whites aside while you pour the yeast and water mixture all into the bowl of dry ingredients.Step 3
Stir together the yeast water and dry ingredients until a sticky dough forms. Now, you’ll fold about ⅓ of the whipped egg whites into the dough using a rubber spatula (don’t use your mixer). Fold another ⅓ of the egg whites into the dough, then the final ⅓ of egg whites. Fold the dough over just until it’s streak-free.Step 4
Preheat an oven to 400 F (210 C) and line a large glass baking dish with parchment paper. Transfer the dough to the parchment paper and gently spread it to all four corners of the pan using your rubber spatula. Next, add extra virgin olive oil to a small dish and dip your fingertips in it. Use your oiled fingertips to make dimples throughout the dough.Step 5
Season the top of the dough with dried rosemary, coarse sea salt, and ground black pepper. Pour all the remaining olive oil over the dimples in the dough. Place the glass baking dish directly in your oven and bake for 25 minutes or until the top is golden. You can actually use a toothpick test to test for doneness.Step 6
After baking, the focaccia bread needs to cool down for 30 minutes or until the top is cool enough to touch. Reduce your oven temperature to 350 F (180 C). When the focaccia is ready, spread marinara sauce across the entire top of the bread. Sprinkle oregano and then shredded mozzarella cheese across the marinara sauce. Bake the pizza focaccia for another 12-13 minutes in your oven or until the cheese is melted and slightly golden.
