Keto Pasta Salad Italiano

You can have this simple side dish prepared in just 15 minutes. This pasta salad is served cold, so it’s best enjoyed during warm months on the patio, but all the ingredients can be found during any season. This Keto recipe is completely vegetarian and vegan, but you can easily add in cooked chicken, bacon, or canned tuna to increase the nutritional value of the side dish. You may also add cheese, such as mozzarella pearls or grated parmesan, for more fat and protein as well. Refreshing cucumber, juicy tomatoes, and fragrant white onion give you crunchy, yummy ingredients to munch on. The “Italiano” flavoring comes from fresh basil and garlic mixed with extra virgin olive oil to coat all the ingredients. Pick your favorite style of shirataki noodles for the Keto pasta salad! Use macaroni, linguine, or thin ramen shirataki noodles at your discretion.

Turn The Pasta Salad Into A More Filling Meal

If you are a vegetarian on the Keto diet, you can add additional Keto vegetables to make a more filling dish. Chopped mushrooms, broccoli, or cauliflower can be added to the pasta salad. If you don’t like raw broccoli and cauliflower, simply boil or steam the veggies before adding them.   • Step 1

    Bring a pot of water to a boil on the stove. While the water is coming to a boil, drain the shirataki noodles from their packaging. Rinse the noodles in a colander before transferring them to the boiling water. Boil the noodles for just 2-3 minutes. Drain the noodles again and transfer them to a large mixing bowl. Let them cool just a couple of minutes before continuing.

    While the noodles are cooling, prepare the other ingredients. Dice the cucumbers into ¼”-thick pieces. Halve or quarter the grape tomatoes, and dice the onion into very small pieces. Toss the chopped ingredients with the cooled shirataki noodles. Then, season the bowl of ingredients with salt and pepper and toss it all together once more.

    Whisk together the extra virgin olive oil, balsamic vinegar, lemon juice, minced garlic, chopped basil, and crushed red pepper. Pour this mixture over the shirataki noodles, and toss all the ingredients together one final time. Chill the pasta salad in your refrigerator for at least 15 minutes before serving it as a cold side dish. The longer the pasta salad marinates, the more flavor will develop. The pasta salad can keep in your refrigerator for up to three days.
