Peel the turnip and slice them into ¼ inch (1/2 cm) thick rounds. Thinly slice the onion. Place the turnip slices in a small pot and cover with water.Step 2
Bring the pot to a boil. Simmer for 5 minutes until the turnips are tender. Drain completely.Step 3
Add the oil and butter to a large skillet and place over medium-high heat. Once hot, add half the onions and turnips. Cook for 3-5 minutes, occasionally stirring, until slightly golden.Step 4
Add the remaining onions and turnips. Reduce the heat to low, and cook for 15 minutes, occasionally stirring, until softened and browned. Take the skillet off the heat.Step 5
Season with salt and pepper. Chop the parsley and stir it in. Transfer to a plate and serve.
