Can you freeze these fries?
Yes, you can! After cutting the dough into strips, place them on a tray and freeze them. Once completely frozen, transfer the uncooked fries to a ziplock bag and store them for up to 3 months. When ready to eat, bake them for 10-15 minutes longer than you usually would.

Step 1
Preheat your oven to 400F/200 C and line a baking sheet with parchment paper. Add the cauliflower rice to a bowl and sprinkle with salt. Microwave it for 5 minutes until it softens. Let it cool for another 5 minutes.Step 2
Transfer the cauliflower rice to a cheesecloth or kitchen towel. Squeeze out as much water as you can. Return the cauliflower to the bowl.Step 3
Add the mozzarella, parmesan, egg, coconut flour, xanthan gum, garlic powder, and ¼ tsp salt to the bowl. Mix until a dough forms. Cover and let it rest for 15 minutesStep 4
Place the dough between two pieces of parchment paper. Roll it out until ¼ inch thick and slice into thin “fries.” Transfer the fries to the lined baking sheet and brush generously with oil.Step 5
Bake in the oven for 15-20 minutes or until the edges become golden and crispy. Take the baking sheet out of the oven and let the fries cool for 5 minutes. Season with a generous pinch of salt and serve.
