What kind of mayo should I use for this?
Use any Paleo approved mayonnaise for this dressing as it will be free of vegetable oil and use real food ingredients only.
Do I have to add chipotle powder?
No, if you cannot find chipotle powder or do not want to add it, you can omit it or substitute it with dark chili powder, which is not as spicy. If you do like heat but do not have the chipotle powder, you can use a pinch of cayenne powder.

Can I say OMG this is wonderful, I didn't have the El Pato so I used Ro Tel and but it in the blender to break it down a bit and use it as a substitute and it is the best dressing ever!!!!
