Keto Buckeye Candy
Halloween is synonymous with sweets and treats, but for those following a Ketogenic or Low-Carb lifestyle, indulging in traditional Halloween candies can be challenging. However, fear not! You can still enjoy the spooky season with this Keto Buckeye candy, a delightful chocolate that combines the irresistible flavors of peanut butter and chocolate. In this article, we explore the Keto-friendliness of this treat, discuss nut butter options, and learn how to store your leftover candy for future enjoyment.
Is buckeye candy Keto-friendly?
Traditional buckeye candy is typically laden with sugar, making it off-limits for those on a Keto or Low-Carb diet. However, this recipe is specially crafted to be Keto-friendly. It swaps sugar for powdered allulose, ensuring that you can enjoy the creamy goodness of peanut butter and rich chocolate without compromising your dietary goals.
Can you use different nut butters for this recipe?
Absolutely! While the recipe calls for peanut butter, you can experiment with various nut butters to suit your taste and dietary preferences. Almond butter, cashew butter, or even sunflower seed butter can be used as delicious alternatives. Each nut butter will bring its unique flavor and texture to the candy, allowing you to personalize your Low-Carb Halloween treats to perfection.
How to store the leftover candy?
Storing your Keto Buckeye candy is a breeze. To maintain their freshness and flavor, keep them in an airtight container in the refrigerator. This will help preserve the chocolate coating and the creamy interior. For longer storage, you can freeze them. Simply place the candies in a single layer on a baking sheet to freeze individually, then transfer them to an airtight container or freezer bag. This way, you can savor candy even after the spooky season has passed.

I made these but am not impressed. The mixture was very crumbley after I added the sweetener - I think the recipe called for too much of it. I added more peanut butter to compensate. The results were underwhelming. They were almost grainy with how much sweetener was used. I wish I would have skipped the sweetener all together. They were also very tedious to make.

There is an error in the nutritient values. It says there is 14 gr. of total carb and 1 gr. of fiber. But the net carb is 2 gr. 14-1=13 not 2. Please check.

Allulose does crazy things to net carbs.

You also need to subtract the sugar alcohols, then it would be correct. The carbs could vary, however, depending on the type of nut butter used.
