Ingredients

    2 teaspoon, cut pieces

  • Olive Oil

  • Step 1

    Add the green beans to a pan of boiling water and simmer for 4-5 minutes until just tender. Drain and refresh under cold water.

    Whilst the beans are cooking, quarter the tomatoes and radishes, dice the cucumber and avocado and roughly chop the lettuce. Add to a large salad bowl and toss to combine.

    Dice the green beans into thirds and add to the salad. Season with a little salt and pepper and toss to combine.

    Finely chop the chives and add to a mixing bowl with the lemon juice, olive oil and a touch more salt and pepper. Stir well.

    Drizzle the salad with the lemony chive oil to serve.

    Can anyone tell me where the sugar alcohols are in this recipe? And why some recipes, such as this one, contain info on GI but most of the other recipes do not?

        This is very good, sometimes I add deli ham or chicken pieces to the salad too.
