This simple recipe is made without the need for an ice cream maker and requires no churning whilst setting!

Recipe Steps

  • Step 1

    Add the cream cheese, peppermint, erythritol, avocado and vanilla to a food processor. Blend well to combine until smooth, with little flecks of mint remaining. You can add more or less mint if you prefer a stronger or more subtle flavor.

    Add the cream to a bowl and whisk vigorously until thick and fluffy. Alternatively you can whip this in the bowl of a stand mixer until soft peaks form.

    Carefully fold the mint cream cheese into the whipped cream.

    Carefully stir in the chocolate chips.

    Pour the mixture into a freezer proof dish or loaf pan in an even layer and transfer to the freezer for 3 hours or until set. Allow to soften a little before serving.

      Can the avocado be tasted in the ice cream as I really dislike avocado? Is their a substitute for it?

        Carb numbers seem off. For one serving (53.9g) how is net carbs calculated to be 4g while total carbs are stated to be 17g and fiber is 3g?

          The sugar alcohol is 12 so …. So 17 minus ( 4 fiber +12sugar alcohol) = 1

          With the rebel ice cream at Safeway you subtract the sugar alcohol as well as the fiber so same thing 1/2 container total carbs 17 fiber 4 looks like 13 but then you subtract the sugar alcohols ( they digest different lyvand do nt count

          Hi, I haven't tried this personally so you may need to adjust the quantity to make sure you have your required level of sweetness.

          I dont use any sweeteners, do i need to add some? Erythritol, monk fruit, stevia all make me ill (sad face)

              Sub for 6-12 drops of liquid stevia or 1/3 cup monk fruit. I prefer monk fruit :-)
