Keto Beef Chili With Cheese
This chili recipe tastes almost exactly like a cheeseburger! Crunchy pieces of bell pepper and carrot go well with chewy ground beef. Each bowl gets a sprinkle of cheddar cheese to bind the ingredients in a thick stew. Plus, who would say no to making their meal cheesy? Additional toppings at your discretion may be extra sour cream, chopped green onion, or your favorite hot sauce.

Ingredients
Green Bell Pepper
3 ounce
Carrots, Raw
1-½ ounce
Olive Oil
2 tablespoon
Hamburger or ground beef, 90% lean

Salt
0.25 teaspoon
Black Pepper
0.25 teaspoon
Onion Powder
0.5 teaspoon
Garlic Powder
0.25 teaspoon
Paprika
0.5 teaspoon
Cumin, Ground
0.25 teaspoon
Crushed Red Pepper by Simply Organic

Beef Broth
3 cup
Sour Cream
¼ cup
Cheddar Cheese
6 tablespoon, shredded

Step 1
Prepare the green bell pepper by roughly chopping it, and chop the carrots into small, round pieces. Heat the olive oil in a large soup pot on medium heat and toss in the pepper and carrots. Put a lid on the pot and let the vegetables tenderize for about 4 minutes without burning.Step 2
Add in the ground beef and all the seasonings. Use a spoon to break up the beef. Cook with a lid on for 2-3 minutes, until the beef browns and liquid collects.Step 3
Pour in the beef broth. Return the lid once more and bring the pot to a low simmer. Allow it to simmer for at least 10 minutes, but you may go longer for softer vegetables and beef.Step 4
After simmering, transfer approx. 1 cup of broth to a separate bowl. Whisk in the sour cream.Step 5
Return the thickened liquid to the chili pot. Stir the ingredients together and allow the chili to simmer openly for about 5 minutes. The chili will still have extra liquid but will reduce slightly.Step 6
For serving, divide the chili into 3 bowls. Top each bowl with 2 TB of cheddar cheese. Stir in the cheese to thicken the chili even more. Enjoy!

Really tasty. But I would never classify this as a chili. It’s a hamburger soup. I’ll make it again, but won’t be when I’m looking for some thick meaty chili.

I wish I could say I liked this, but alas, hamburger soup is a hard sell. My family will never let me live this down. And my husband, has vowed to never again let me make a keto dish. 🫣

Try adding xanthan gum to thicken the dish. I used 1 T plus 2 T coconut flour to dredge the beef in before searing for stew I made. It had 2 1/2 - 3 cups of broth

I love chili and after reading the write-up was really looking forward to this. I reduced the broth by a cup (as even 2 seemed too much) and added 2 tablespoons of Lea & Perrins Worcestershire sauce. Alas it was more of a soup than the hearty chili I anticipated. Not bad but I don't think I'll make it again.

This is the best chili I've ever had. I cut the liquid in half and it came up with a thick juice. Love it:)

Doesn't even slightly taste like a cheeseburger. Just tastes like stew. It's not bad, but I wouldn't cook it again.

Made this last night and loved it! Only thing I added was a jalapeño pepper to the ingredient list. I also had a little bit of almond flour to slightly thicken. Might leave it out next time. Didn’t really see much of a difference. Will definitely make this again.

Add some dill pickle chunks when serving yumm, if you add 1/2 tsp mustard powder to this, tastes more like sharp cheddar

Which hamburger is used the 80/20, 90/10, or 93/7? Also can you cook the hamburger before adding it? Also, can Knorr’s Tomato bullion be used, rather than the broth?

Choose whichever you want. Yes, you can use tomato bouillon if that’s your preference. Be brave and try it!

To the posts about thicken. Just do 1 tbsp corn starch to 2-3 tbsp water, make a slurry mixture and add to soup while still on the stove. will thicken after 5-10 minutes.

This was amazing! We used Knorrs tomato bouillon instead of beef broth and added more salt. We also topped it with avacado slices. Fantastic!!

Really good meal could use a little thickening on the sauce it can be a bit soupy maybe add almond flour?

CarbManager if you are listening, we really need to be able to adjust recipes for one particular meal. For example, I substituted parsnip for carrot, didn't have green pepper so added a zucchini ..... because it's green, a vegetable and gets Keto grade A. Also added a small onion and used a whole pound of ground beef because I wouldn't have anything else to do with a few ounces that would have been left over. Note - I browned the zucchini and parsnip before adding to the hamburger.

We plug in substitutions all the time! Copy the recipe to your recipes, then edit. We do pay for premium if that makes a difference. So worth it to us!!
