It doesn’t have to be Taco Tuesday to enjoy chicken enchilada soup! This keto-friendly version skips on some traditional Mexican ingredients, but the soup tastes rich and exactly like a cheesy, hot chicken enchilada! Simply throw the ingredients in a Crock Pot, and you’re set for your lunch or dinner. This is also an excellent recipe for meal prepping – just portion and freeze your meals.

  • Step 1

    Dice the red bell pepper and red onion. In the Crock Pot, combine the chicken, bell pepper, red onion, roasted tomatoes, garlic, salt, pepper, paprika, cumin, and cayenne. Pour the chicken broth over all the ingredients.

    Cook the Crock Pot on high for 4 hours, or until the chicken becomes very tender. Use two forks to shred the chicken.

    Just before serving, stir the sour cream into the soup so it thickens slightly. Garnish each bowl with 1 ounce of avocado slices, ½ TB of shredded cheddar cheese, and ½ TB of chopped cilantro. Enjoy!

    Strange recipe to say 4 cups is 400gm. One cup is 250gm. 260gm metric is around 8 oz, S when cooking take note. I cooked it, great recipe, doubled the chicken and added chilli instead of cayenne pepper.

      Made this with less broth so it was more like a stew and damn was it good! Added jalapeños for extra heat. Some keto tortillas would have been perfect for dipping! Will make it again.

          This was fantastic, and will certainly be a regular staple for us. I served it at a book club holiday party, and everybody loved it. And my teenage kids did as well and they added tortilla chips lol. I did add cabbage as well, which was perfect. I did it in an Insta pot for 50 minutes as someone suggested and it worked out great. Thanks so much!

              We loved it!! I did not add sour cream, avocado, shredded cheese, or cilantro because I didn’t have them- but did sub cream cheese for sour cream and Rani Brand Extra Hot Chili Ground for the cayenne pepper. I doubled the ingredients except for the tomatoes and broth…as others shared too much liquid was an issue. To expedite the process I followed whatsup2010 and used my InstaPot on high for 30 minutes. GREAT flavor!! Thank you for sharing this recipe😋

                    Surprisingly good! I didn’t add the sour cream or avocado (just my personal preference). I did add a block of cream cheese in the slow cooker as well as taco seasoning, I did sprinkle less than 1/4 cup of corn in. Super good!

                      I used my Ninja Foodi on the slow cooker setting, I did not add the sour cream, but I did add a small can of jalapeño peppers and use my own homemade chicken broth. The soup when finished is spicy and delicious. Next time I’ll add the shredded cabbage suggested in other reviews!

                        I do not have a crockpot but I have a big cast iron “ Dutch oven” type pot. This may be a silly question but I could just cook it in that and let it sit and cook for a long time … checking it periodically?? Yes ? No ? And how long? I really want to try making more meals however I literally am clueless in a kitchen especially cooking anything other then boiling pasta noodles and obviously that’s not happening. Any help would be great thanks

                          Use the dutch oven. Cook on low temp.\ Check nthe chicken until you can shred it.

                          Loved it, as did my husband. I cooked it on the stove & added white cabbage to bulk it out. I did omit the sour cream or avocado though, that was just personal choice. Will definitely make it again.

                            It is very bland and mostly just liquid. There are many other chicken and soup recipes that are a great deal more appetizing.

                            This was delicious, satisfying and filling. Perfect for a cold winter night. I put everything in an Insta-Pot, high pressure for about 30 mins. It was perfect. The chicken shredded easily even though I used frozen ones. This will be a go to recipe for sure!

                              We really enjoyed the flavors and the scents while it cooked. I cooked it in an InstantPot for 50 minutes (with a quick release). Also served with a slice of Yeast bread. I like the idea of adding cabbage - but didn’t have any this time.

                                  Ok, it was absolutely delicious!!! I ended up adding 15oz. of sliced/chopped green cabbage to add more substance to it. The cabbage didn't change the flavor and still kept the carbs pretty low at only 3oz. per serving. Can't wait for leftovers tomorrow!

                                      Very delicious, everyone in the family enjoyed this meal. Super easy to make and the best part! You set it and forget it for 4hrs. Easiest dinner i have made in a long time.

                                        Although this was a carb rich meal, it was worth it for taste. Just had to adjust other meals as I only do 15 carbs a day, but froze the rest for a nice warm meal in the cold winter months in Montana.

                                          The cm app claims the dish has 11carbs & 4fiber, which would be 7nc. Cm says 8nc.But, if you are trying to stay around 15carbs, that’s half your carbs in this dish.

                                            This is delicious! I was a bit skeptical of having too much liquid so I drained my tomatoes and only used 3 cups chicken broth. Seriously amazing especially with the avocado, cheese and sour cream toppers. Thank you so much!!!!

                                              This was very good! As I already had a rotisserie chicken I made this on the stove top and simmered for 15 mins. Easypeasy! Yum!
