Keto Drive-Thru Chicken Nuggets
Chicken nuggets from your favorite drive-thru can be really nostalgic, and you can create that same feeling at home while staying healthy. No empty fillers are added to the chicken, and no frying oil is needed here. Whip up a batch for meal prepping or to fill up your whole family.

Boneless Skinless Chicken Breast
1 pound
Salt
⅛ teaspoon
Black Pepper
⅛ teaspoon
Onion Powder
¼ teaspoon
Almond Flour
2 tablespoon
Parmesan Cheese
¼ cup, shredded

Step 1
Preheat an oven to 375 degrees and line a sheet tray with parchment paper - set this aside. In a food processor, pulse together the chicken breast, salt, pepper, onion powder, and the first amounts of almond flour and parmesan. Pulse until the chicken is bound together like a dough.Step 2
Create approximately 20, 1-tablespoon chicken nuggets. Roll each portion into a ball and then gently flatten to a ½-inch thick disc. Once all nuggets are formed, set them in your freezer temporarily, but no longer than 10 minutes. They should not be frozen for this recipe.Step 3
Whisk together the eggs in a small bowl. Also, combine the final amounts of almond flour and parmesan together on a wide plate.Step 4
Pull the chicken nuggets from the freezer. Once by one, dip each nugget into the egg and then roll in the dry breading mixture. Let any excess egg run off each nugget before coating in breading.Step 5
Bake the tray for 45-50 minutes, flipping the nuggets about 30 minutes in. You can break off any crispy parmesan edges, or you can enjoy those with your nuggets.

Wonderful! I used ground chicken (to streamline the process) and baked in my air fryer instead of the oven. Only took 15 minutes at 375 (with preheat).

Can I use coconut flour for this and how much or would it mess the taste?

they are in the oven now, hope all that work is worth it. Next time I would probably make bigger ones, more like the size of a burger.

I also added some garlic powder and paprika and parsley. Skipped the dried onion. And added lots of pepper to the flour coating. Delicious

This recipe is a bit tedious but the results are so good. We didn’t use the mayo in step 1 and they were a bit dry. It’s been a long minute (3 months) since I’ve had anything breaded so this was such a wonderful treat. I will definitely make these again! Thank you for sharing the recipe!

Use boneless skinless chicken thighs instead of boneless skinless chicken breasts - or add a tablespoon or two of avocado oil before forming your nuggies.

You could add 1-2 teaspoons of mayonnaise to step 1 in the original recipe here. You just may need to be a little more careful when forming the nuggets. Hope this helps!

Mixed it up a bit and used ground turkey breast, left off the flour and added pecorino with parm! Pan seared and baked the rest of the way. Delish. Thanks for sharing.
