Ingredients

  • Collard Greens

    3 cup, cut pieces

  • Unsalted Butter

  • Step 1

    Melt the butter in a large pan over a low heat and add the garlic sautéing for a minute to soften. Then add the allspice and cook gently for a further minute until fragrant.

    Slice the collard greens into half inch strips and add to the pan along with the salt and pepper. Toss in the butter and seasonings and cook for 3-5 minutes until tender and glossy. Serve immediately.

    I was very surprised at the great flavor for two reasons- traditional cooking of collards in my family involve collards boiled with meats like smoked ham hocks or turkey that has been pre-cooked. Second, who puts allspice in a green vegetable? That was a surprise. I didn't measure and probably used a bit more. My family loves garlic, so I used twice as much. I will probably Sautee my collards in the future. They tasted fresher and not watered down. I have some Thai seasonings from Penzey's. That is next in my greens.

        I used salted grass-fed butter and did without the sea salt. OMG, my kids have never eaten so much collard greens. Yummy!
