This eggnog version is so warm and rich. I made it light on the spices so feel free to amp it up! It is very easy to make and dark liquors do not have carbs or any added sugars so they are ok to enjoy on the Keto diet, but adding bourbon is optional. We used freshly grated nutmeg, which is so much better than the pre-ground version.

What alcohol goes into eggnog?

Eggnog is traditionally made with bourbon or rum. Make sure to choose plain liquor (no flavored or spiced rums). However, you may include other light or dark spirits depending on your tastes and alcohol tolerance. If you like the subtle flavors of rum, use rum flavored extract instead of alcohol for a virgin recipe.

Flavoring a basic eggnog recipe

Remember, this is a simple Keto eggnog recipe that can be modified or added to. If you want to make the eggnog sweeter, add liquid stevia drops. You can add other spices or integrate any traditional family recipes. Other low-carb non-dairy milk includes coconut, soy, and oat milk.

Is this recipe vegan?

If you need this to be dairy-free replace the heavy cream with equal parts coconut milk or almond milk.

    Add the egg yolks and sweetener to a bowl. Beat together using a whisk until they become lighter in color.

    In the meantime, combine the almond milk and spices together in a medium-sized saucepan. You want to choose a pan that is large enough to combine all the milk and the egg mixture together. Heat the milk until steamy, but not boiling.

    Slowly whisk in the hot milk into the eggs to temper them. Then add the milk mixture back into the saucepan. Cook it on medium-low heat.

    Continue cooking and stirring the milk constantly until the milk coats the back of a spatula. Do not let the milk boil or else all the eggnog will curdle!

    Strain the eggnog to remove the spices. Add the vanilla and bourbon (optional). Serve hot with a sprinkling of spices!

    Really tasty but extremely sweet! I will reduce to 1/2 cup sweetener or maybe less if I make it again. I used Erythritol & Monk Fruit sweeter (comes combined) and it was very sweet ( and I love sweet things)!

      Excellent tasting egg nog!! I did a couple of things differently. I pasteurized my eggs ahead of time using my sous vide which is far easier than watching a boil on them. I also took the author's advice and probably tripled the spices. Finally in hindsight, like most American dishes, this came out far too sweet and in the future I will use maybe half a cup of the sugar replacement.

        Just made this and never had hot egg nog. Omg it is better than store bought for me. I’m chilling some for tomorrow to try cold. Didn’t know dark liquor was carb and sugar free. Although I’ll Skip it because I love the sweet taste without it. Where have you and keto been all my life? Ha ha

          I was so upset that I wouldn’t be able to have egg nog during the Christmas season but this is so yummy! Not exactly like egg nog but certainly close enough.

              It says only 3 net carbs... But recommends 9 tsp of sugar per 7 oz serving At 3 or 4 carbs each tsp! Am I missing something?

                ZERO NET CARBS. The ingredients in Swerve do not affect blood sugar, so the carbohydrates it contains are considered non-impact.                       Do you use Almond milk and heavy cream together or one or the other?

                        I used both because I wanted to lower the carbs, but like the taste of cream. If you have an issue with dairy, please feel free to adjust the recipe and replace the cream 1:1 with almond milk. It will still be delicious!

                      Yes. Exchanging almond milk for the milk in this recipe will reduce the carbs tremendously. There are 24 carbs in 2C whole milk and only 3 carbs in the same amount of almond milk. you might consider cashew milk for this one as it is creamier.
