Ingredients

  • Unsalted Butter

  • Cauliflower

    Cauliflower

    1 medium - head - 5" to 6" diameter

  • Garlic

    Garlic

    1 clove

  • Chives

    Chives

    1 tablespoon

  • Parmesan Cheese

    Parmesan Cheese

    1 tablespoon, grated

  • Sour Cream

    Sour Cream

    ¼ cup

  • Salt, Sea Salt

    Salt, Sea Salt

    ¼ teaspoon

  • Black Pepper

    Black Pepper

    ⅛ teaspoon

  • Step 1

    Dice the cauliflower into florets. Add the florets to a pan of boiling water and simmer until tender. About 5 minutes. Drain the cauliflower and pat dry.

    Add the cauliflower to a food processor along with the garlic, Parmesan and butter. Season to taste and blend to a mash.

    Add the sour cream and blend again.

    Transfer the mash to a serving dish and stir through the chives to serve.

      Inspired by a comments from previous posts, l MICROWAVED the cauliflower 4 minutes then added it and the next ingredients to my IMMERSION BLENDER. Awesome results, smooth and creamy. For me, it was simpler, quicker and a much easier clean up. A real keeper!

              Another idea that I use is once the mash is complete I top with cheddar and bake in the oven. My husband, who does not do Keto loves this dish

                Was very good Could use a little bit more salt and flavoring. I used 2 cloves garlic, and had to use extra salt. I think next time I would also add more cauliflower and get 5 servings out of it. Will definitely make this again, with just a few tweaks.

                      Similar to how I do it! Sometimes I use Parmesan and sometimes I don't. I cook the cauliflower in a steamer basket in the Instant pot for 4 minutes with quick release. Let it cool enough to handle and put it in a clean thin tea towel or cheese cloth and squeeze as much water out as possible. I use an immersion blender to get a smooth texture. I make this in advance, refrigerate it and heat portions in the microwave as needed.

                      1 clove of garlic was extremely strong for us. Maybe the cloves are bigger here? I should've checked the weight :P Awesome recipe though! Thoroughly enjoyed it.

                                Made this in my airfryer. Put egg, salt, pepper, and chopped bacon on top of avacodo. Cooked for 10 min at 400F, topped with chives and mozzerella cheese. Crispy on the outside, soft yolk inside, which I liked. Yum! I would make again. Cook longer for a harder yolk.
