Fresh broccoli is lightly coated in Italian spices, then tossed together with bits of olive, salami, tomatoes, and mozzarella! This recipe is a quick side dish, but it also makes for a great snack or appetizer. The original recipe here makes a total of 3 ½ cups salad, at a ½ cup per serving!

  • Step 1

    Start with a thawed bag of broccoli. Drain and cook the broccoli on high in your microwave as directed on the packaging. When it is cooked and cool enough to handle, chop the broccoli into small, assorted bits. 1 or 2-bite pieces are good.

    Combine the chopped broccoli with the olive oil, white wine vinegar, salt, pepper, red pepper, and italian seasoning. Toss the ingredients together until the broccoli is coated.

    Prep the remaining ingredients by slicing the salami, chopping the olives, and cutting the grape tomatoes into quarters.

    Combine the remaining ingredients, including the mozzarella pearls, with the broccoli. Serve chilled or warm - whichever you prefer!

      This is a great recipe! Delicious, easy and stores well in the refrigerator. I also substituted balsamic vinegar and definitely recommend that if you like it.

                      Swapped the cheese to baby bococini. Left the salami out and just blitzed the raw brocilli in the food processor nice crunch to it. Next time i will leave the salt out.

                                If you have time, I recommend making this the day before, so ingredients marinate and flavors blend. Excellent salad - my family loved it!

                                    Yum! Swapped the cheese to feta and left out the meet. Used balsamic vinegar and olive oil for the dressing. Had it for a main meal, so ramped up the quantity.

                                      I used raw broccoli slaw instead of broccoli florets. It was very crunchy; a little less crunchy the next day My non-keto husband loved it; he added raisins and chopped kale.

                                              I used fresh broccoli and didn't steam it as I wanted the crunch. Really liked this and even took leftovers for lunch.

                                                Little too salty for me. Between the salt in the dressing, the salty green olives, & the salami, my lips were tingling. Some of the crushed red peppers may have contributed to the tingling hit the other part was definitely the salt. Overall though, the flavor was pretty good otherwise.
