  • Step 1

    Set the coffee to one side to go cold. Add the cream to a mixing bowl and whisk until light and fluffy. Alternatively you can whip using a stand mixer if preferred.

    Add the erythritol, cold coffee, mascarpone, vanilla and cocoa powder to a food processor. Blend until smooth.

    Carefully fold the mascarpone mixture into the whipped cream until well combined and you have a soft mousse consistency. Refrigerate until ready to serve.

    I made this today, it is fantastic!! I used swerve confectioner sugar instead of granulated and almond extract in place of the vanilla . definitely make this again maybe try some new combinations..

      I omitted the Erythritol (poisonous to dogs) and added a scoop of vanilla protein powder. For those who want a thicker consistency, I added heavy cream sparingly, one Tablespoon at a time until the desired consistency. I mixed by hand with a spoon, and I didn't add the coffee either. I added a splash of vanilla extract. Completely satisfied my chocolate craving after dinner.

        Xylitol is poisonous to dogs. Did not know about erythritol.

      Skipped the coffee but added more chocolate and sweetener. Very good! Just wish I could find unsweetened Belgian chocolate somewhere for better flavor.

      I skipped the coffee and used less than 1/3 cup of Monk Fruit for sweetener instead. Wow! Satisfied my sweet tooth! Definitely will make again and try with other flavors. Super easy! I didn’t bother with food processor instead used hand mixer.
