This soup is simple to prepare and ideal for lunch on a cold day or as a starter before dinner. It can be made ahead and frozen.

  • Step 1

    Melt the butter and coconut oil in a large casserole dish or saucepan over a medium heat before adding the garlic, onion and cabbage. Sweat the vegetables in the fat until soft – around 10 minutes.

    Add the chicken broth to the pan and simmer for a further 10 minutes.

    Transfer the vegetables and stock to a blender and blend to a smooth, creamy liquid.

    Pour the soup back into the saucepan over a low heat. Season generously with salt, pepper and a pinch of nutmeg. Add 1/2 cup of cream and stir through. Keep the soup on a low heat until piping hot through.

    While the soup is heating, add the diced bacon to a dry frying pan over a medium heat and cook until crispy – around 3-4 minutes.

    Serve the hot soup in individual bowls and sprinkle with the fried bacon and sliced green onions. Drizzle with the remaining cream to serve.

    Very delicious! Subbed diced ham for bacon(had none), and added celery and 1/2diced carrot. It was so good. So happy I have leftovers for lunch!

        Definitely will give this a try but I will omit salt since there is salt in the bacon and salt in the broth.

            I love it and made a few changes. I cooked the veggies in olive oil only and substituted 2% Greek yogurt for the cream. It tastes delicious!!

              fry up a sweet onion, add to the cabbage pot. I used 1 tbsp salt. Added Cumin to the recipe.

                    So delicious. I did it with roasted cabbage using bacon grease, more garlic, cayenne pepper, cumin, Worcestershire sauce and it is officially one of our favorite soups now.

                      I like the idea of roasting the cabbage first. Did you use the bacon grease during the roasting? Did you cut the cabbage in pieces before roasting? What oven temperature and for how long? Any additional instructions or tips for the way you did it? (I'm not terribly experienced in the kitchen. ) Thanks 😊

                    It tastes ok. I don’t think I will repeat the recipe. It made an awful lot more than one person could eat.

                      The recipe as given is for 6 servings so, yes! a lot more than one person could eat at one time! However, you can freeze the leftovers (ideally in portion-size containers); or you can adjust the number of servings by editing the amount given just above the ingredient list.

                    This is really good. Tried it with Cumin , Cayenne, Coriander and Fennel for spicier version. Also added a leek.

                        In the description at the top (About The Recipe) it says it can be made ahead and frozen.
