These Keto snack bites are a great way to boost your fats and plant-based protein throughout the day. Our Keto vegan bites are prepared with smooth almond butter, chia seeds, crunchy pumpkin seeds, melted coconut oil, ground almonds, flaked almonds, plant-based protein powder, dried cranberries, a touch of low carb sweetener, and warming spices. Perfect for low carb snacking on the go!
Is Protein Powder Low Carb?
Protein powder is a great way to boost your daily protein intake on a plant-based diet. Although there are many low carb and vegan protein powders available, some are slightly higher in carbs than others - particularly if they are flavored. The key to balancing this is to make sure you also include adequate fats throughout the day to meet your macro needs. We have added both almond butter and melted coconut oil to our Keto snack recipe to both bind the mixture and boost the fat content.
What Protein Powder Should I Use?
We have used a vanilla Keto-friendly vegan protein powder for this recipe. There is a range of protein powders available on the market that are suitable for both Keto and plant-based diets. These are commonly made from soy or a pea protein mix. You can also often buy powders that are plain or flavored, such as vanilla or chocolate. You may use any plant-based low carb protein powder you prefer, adjusting your macros accordingly for different brands.

Reduced Sugar Craisin Dried Cranberries

Almonds, raw
1 tbsp, sliced
Cinnamon

Ginger, ground

Erythritol

Pumpkin seeds
1 tbsp
Almonds, raw

Coconut oil

Recipe Steps

Step 1
Melt the coconut oil and add to a mixing bowl. Roughly chop the cranberries. Add the cranberries to the bowl with all the remaining ingredients. Mix everything together well to combine.Step 2
Divide the mixture into 8 even-sized portions. Roll each portion into a ball with your hands. Arrange the balls in a bowl or on a plate. Cover and refrigerate for 1-2 hours or until chilled and firm.Step 3
Once chilled, the Keto snack bites should be firm and holding their shape. Transfer to an airtight container until ready to serve.

Easy and fast to make. I added some cacao nibs in mine. Make sure you read the directions. I used a small melon ball scoop to form these. Probably takes 2 of mine to equal one for the nutritional information. They will seem very "loose" until you let them sit in the fridge but once chilled they set up nice.
