Ingredients
Salami
6 medium slice - 3 1/8" diameter x 1/16" - each 0.4 ounce
Raw Egg
4 medium
Mozzarella Cheese
2 ounce
Cream Cheese Spread
1 tablespoon
Red Onion
1 tablespoon
Olive Oil
1 tablespoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Heat the olive oil in a skillet over a medium heat. Roughly slice the salami and add to the skillet along with the onion and cook for a few minutes to brown the salami and soften the onion.Step 2
Whilst the salami cooks, add the eggs to a mixing bowl with the cream cheese, salt and pepper. Crumble in the mozzarella and beat together to combine.Step 3
Pour the beaten egg mixture over the salami and onion and allow to settle for a moment, then scramble with a wooden spoon until the egg is cooked through and mozzarella is melted.

Didn't use the salt as salami is already salted, otherwise great recipe. Will definitely make again!

Delicious and uses ingredients low-carbers would already have on hand. I’ve many millions of omelets and scrambled eggs in my time but never would have paired this combo in an egg for a sammich! Delicious and definitely a repeater!
