Quiche Lorraine is one of the most popular and classic styles of quiches. Who doesn’t love crispy bacon and gooey swiss cheese baked together in a bed of eggs? To make this recipe keto-friendly, you can say “goodbye” to the classic quiche crust and “hello” to ham cups! Deli-sliced ham makes the perfect alternative for holding a quiche filling that is low carb and even adds some additional protein to your meal. This easy Keto breakfast is great for meal prepping or for on-the-go lifestyles. You can make multiple in advance, which can stay good in your refrigerator for up to 5 days. Just grab a ham cup quiche (or two) when it’s time to eat!

Variations you can make

Just about every component of this recipe can be substituted for other ingredients. Whether you have different taste preferences or dietary needs, you can alter the ingredients as needed. The ham slices can be substituted with slices of turkey or even deli roast beef. Substitute the cheese with your favorite mild-tasting cheese. The bacon can be omitted as well if you don’t want bacon.

More to add

You don’t want to add too much more to these ham cup quiches, or else they’ll overflow. Try replacing the bacon with diced mushrooms, onions, or bell peppers. You can also add these ingredients in small amounts without replacing the bacon. Try adding shredded cheddar cheese, mozzarella, or even gouda to your quiches.

What type of sliced ham to use

Don’t grab just any style of sliced ham from the grocery store! Avoid those that are labeled with sugary-sounding names. Maple or brown sugar styles of ham shouldn’t be used. Make sure if you purchase packages of sliced ham that it’s packaged in water.

  • Step 1

    Preheat the oven to 400 F (200 C). Spray a muffin tray with pan spray, and place a single slice of ham in each muffin slot – 6 total. Set the tray aside for now.

    Cook the bacon until it is crispy – about 4 minutes – and allow it to cool. Then, dice the bacon and distribute it amongst the ham cups. Dice the swiss cheese, and distribute this amongst the ham cups as well.

    In a small bowl, whisk the eggs, almond milk, salt, pepper, paprika, and onion powder together. Pour the egg filling into each ham cup, so the bacon and cheese are fully covered with egg. Pour slowly so as not to let the ham cups overflow.

    Bake the ham cup quiches in the oven for 20 minutes. The cooked egg will rise, but it will return to the ham cups while cooling. Remove the ham quiches after letting them cool for just a few minutes and enjoy!

              This is a great recipe! Super tasty and easy to make! You can use different cheese and seasonings to suit your taste. Avacado oil works great for greasing your muffin tin.

                  Yummy! You MUST use a strong flavor cheese. I tried it with a jalapeno/habanero cheese but it wasn't as flavorful as the Swiss. I also added cayenne and gave it a little zip but did not make it spicy.

                        I use this recipe as a reminder that meat + veg + cheese + herbs + egg = an easy make ahead breakfast or lunch. Making them in large muffin tins because we always eat two of the smaller ones anyway. Carb manager taught me the general macros for me that work, so I don’t calculate carbs anymore because I have the gestalt of how to keep them in a successful range that doesn’t feel like food jail. This is one of our regular meals. Just made it with Turkey, Brechers cheddar, fresh basil, roasted garlic and left over roasted broccoli from dinner. Delish!

                                Almost every deli ham have sugar at least 1 -2% since its procesed meat, like almost every deli cold cut, sauce, hot dog ect.

                                  I did add some green onions, used the sliced Swiss cheese and just ripped it up and tossed it in. I only had one piece of cooked bacon, so tore it up and threw it into the tins. Basically it was pretty fast and delish!
