Chicken enchilada bowls are the perfect recipe for meal prepping! Simply double this recipe and make the shredded chicken filling in bulk so you have lunch all week! This is a base recipe, so please include additional toppings at your discretion. Suggestions include lettuce, avocado, jalapeno, fresh cilantro, cheese, or sour cream.

  • Step 1

    Preheat an oven to 375 degrees. Place the chicken breast in a baking dish that isn’t much larger than the chicken. Drizzle the olive oil over the chicken. Sprinkle all the seasonings and the bay leaf over the chicken as well.

    Cover the dish with foil and bake the chicken for 1 hour. Then, use a pair of forks to shred the chicken into fine shreds. You can allow the chicken to cool for easier use.

    Divide the prepared cauliflower rice into two bowls or two meal prep containers. Top each bowl off with half the prepared chicken. Add any additional toppings you’ve chosen for your enchilada bowls.

          Made it for dinner tonight and it was amazing! Cooked it at 350 for an hour though and doubled everything.

            I had some really issues with this recipe. One, cooking chicken that long dries it out. I find cooking chicken breasts at high temps 450-500° for 15 mins. leaves it very moist. Also, the seasonings just hardened into a crust and fell off as I was shredding the chicken because of how long it was in the oven. Not terrible, but not terribly memorable.

              You might not have had enough moisture in your chicken breasts to begin with. Sealing the foil around your pan good helps create steam and moisture to moisten the breast as it cooked. If you want to make sure you can always add a tablespoon or two of water )or chicken broth) for added moisture when roasting in the oven.

                  Dear carb manager do you have any idea why i stopped weigh loss ? I am doing the same but at the start poitn i loss good but after one month it stoped

                    I did the same thing and i read that my electrolytes may be off so I ordered a powder electrolyte that you mix in your water and sure enough I started losing again. Not sure if this is what is happening with you or not but just relaying my own experience. Just don't over do if you try it.

                    the same thing happened to me. Starting with high fat is good but then I realized I had to reduce the high calorie fats such as MCT oil and I was right back on track. I dont let the app take off calories for exercise and that helps too.

                    Try reducing your fat intake it it’s fairly high. Macros aren’t always perfect. I reduced my fat from 130gm to 90gm and it helped. Also try restricting your eating time to 6hours per day. Don’t give up

                    Try the intermittent fasting along with switching things up. If you have a bigger meal for dinner try having it for breakfast or lunch. Keep at it and don't give up. I hit a stall in weight loss for almost 2 month but keep in mind a lot of times even if you're not loosing weight you can still be loosing inches which is just as good. You got this!!!

                    Sounds like you hit a plateau. You trying carb cycling intermittent fasting, or an egg fast.

                  Amazing 🙌🏼 I used the left over water from the chicken and cooked it with the rice and added a little bit of knolls seasoning 🤤 with avocado and cilantro. Damn good dish lol.

                      Do you cook the Cauliflower Rice?

                        You could use raw cauliflower rice, but cooking it first may be preferred! You can simply steam your rice, or you could cook it lightly in a pan with your preferred cooking oil. Make sure to add any extra oil you use to your nutrition log. Hope this helps!

                        Hi there, Cauliflower rice is simply "rice" that has been made from cauliflower! You can use a cheese grater or food processor to grate the cauliflower into small "rice" pieces, or you can buy already prepared cauliflower rice in the freezer section at your grocery store.                         Let's see, the directions state the entire recipe is for 2 servings, so if you're looking for 1 serving, divide the recipe in halves and the answer would be 1/2 of the recipe.

                        Hi there! Please note that you need to include additional toppings, such as avocado, at your discretion. It's really up to you how much avocado you'd like to include in each bowl. We would suggest no more than 3 ounces of avocado per serving, as this will add a little under 9g of carbs to your meal.
