For a little taste of the Midwest in snack form, you must try these Italian-inspired roast beef sandwich cups. Each cup is lined with deli style roast beef and filled with hot, melted mozzarella cheese, crunchy sauerkraut, and spicy giardiniera. It’s all the flavor without the traditional mess of a bun dipped in gravy!

5-½ ounce
Mozzarella Cheese
6 ounce
Sauerkraut
6 teaspoon

Step 1
Preheat an oven to 350 degree and prepare 6 muffin tins with pan spray. Line each muffin tin with 1-2 thin slices of roast beef, depending on how large your slices are.Step 2
Place a ½-oz of mozzarella cheese in the bottom of each roast beef cup. You can simply rip or cut your mozzarella slices into 4 squares each for easy distribution.Step 3
Place one teaspoon of sauerkraut and 1 heaping teaspoon of giardiniera into each cup. Try to exclude any oils or liquids from these ingredients.Step 4
Top off each cup with the remaining mozzarella cheese - ½-ounce of cheese per top.Step 5
Bake the cups in the oven for 15 minutes or until the edges are crisp and the cheese is melted. Enjoy!

This makes 6 and a serving is 3/4 cups. Is that 3/4 of one sandwich cup?
