Recipe Steps

  • Step 1

    In a bowl, combine the chia seeds, almond milk, vanilla, and cocoa powder with a whisk. Wrap the bowl in plastic and set it in the refrigerator for 3-4 hours.

    This was delicious, added protein powder to it and dri,led with Almond shavings and almond butter with blueberries. Yum

      This was good! I left it overnight and the texture was perfect. Next time I'm going to add a little sweetener. I had it with raspberries. Yum!

        I followed the directions, but the pudding was soupy after 4 hours. Will try again overnight and/or increase the chia seeds to see if that helps.

          I'm going to reply to my own comment because I now have this figured out and enjoy the chia pudding almost every day. First, this will not set in 4 hours, for me it takes at least 12 hours and 18-24 is better. I replace the cocoa with dutch processed cocoa (check the carbs), skip the vanilla, and use unsweetened almond milk. I don't bother with the strawberry, but do add stevia to make it sweet (my preference). If your pudding is still not setting, your chia seeds may be old. Another trick I learned was to stir the pudding well when you initially make it and then come back about 10 minutes later and give it another stir. Then let it set for 12-24 hours. The extra stir helps keep the chia seeds from sinking to the bottom.

          Don't use almond milk, use either coconut milk from the can, or hea y cream

              Yummy! My whole family loves this chocolate pudding. The fresh strawberries are a wonder addition, I also serve with a dollop of coconut Ready-whip topping.

                I keep this pudding in my refrigerator at all times. It delicious and really hits the spot when I’m craving something sweet. I make a double batch so it lasts a few days. Making it in my Magic Bullet is a snap.

                  Do you add all ingredients and then blend? I find the chia texture a bit difficult for me

                Make the night before and take out in the morning for a little before eating. Top with a bit of whipped cream! So delicious!

                    This is so good! I made almond milk from scratch and prepared this recipe. This morning I added a few raw pecans in with it. Yum.

                        Sub with raspberries warm the milk gently (Keko original) take off the heat first and add homemade full fat Greek yoghurt 1:1 and whisk good. The texture is so much nicer and creamier with yoghurt and the chia softeners up quicker thicker and you don’t need to leave overnight. Sweeten to taste.

                          Used Swerve no calorie sweetener, cashew milk and heavy cream. I blend it a bit to break up the seeds (i hate having them stuck in my teeth - lol!)

                            This was awesome, let sit overnight and part of day. Thickened up and put teaspoon of almond butter , had for after dinner snack.

                              I use Equate - Walmart Chocolate Protein Shakes for my liquid. I split one into 2 glass containers and add 1.5 tbs of chia seeds to each. I let it sit overnight. Gets nice and thick, no additional sweetener needed.

                                Took Atkins Milk Chocolate Delight and divided that into 2 and added abt 1.5 chia seeds to it! Put in refrigerator overbite and no sweetener needed! Great idea!!
