Low Carb Waldorf Salad
This keto adaptation of the classic Waldorf salad replaces grapes with low carb blueberries and encases the salad vegetables in a rich blue cheese dressing.
Perfect for an afternoon lunch for two or a side salad for four people. This is also a great salad to take to work or when you are on the go.

Ingredients
Romaine Lettuce
1 cup, shredded
Lemon Juice Raw
2 teaspoon
Celery
1 medium stalk
Blue Cheese by Stella
1 tablespoon
Natural Yoghurt by Onken
0.6 ounce
Garlic
1 clove
Blueberries
⅓ cup
Walnuts
⅓ cup, chopped
Recipe Steps

Step 1
Add the walnuts to a large frying pan over a low heat and toast gently for 4 minutes. Reserve to one side.Step 2
Tear the lettuce leaves into large strips and slice the celery into bite sized chunks. Add to a mixing bowl with the blueberries.Step 3
Add the toasted walnuts to the salad and stir well to combine.Step 4
Peel and mince the garlic and add to a small bowl with the blue cheese, yoghurt and lemon juice. Season with a little salt and pepper and stir well to combine.Step 5
Pour the blue cheese dressing over the salad and stir through until the salad is coated in the dressing. Serve immediately.

Am I the only one that thinks a salad with ½ a cup of lettuce is ridiculous?! ½ a celery stalk and less than an ounce of nuts makes a meal?? Would love to hear feedback.

I admit that from the "sound" of it it does not seem like much so I agree. The protein in the nuts and cheese, along with the rest, may just fill me up. I will try it and get back to ye.

Could you substitute feta for the blue cheese?

I didn't like this but my husband did. I'm not a fan of blue cheese or plain yogurt though
