Sun-dried Tomatoes, Oil Pack, Drained

Feta Cheese
3 tablespoon
Zucchini
1 small
Peppermint, Fresh
1 tablespoon
Lemon Peel Or Zest Raw
1 tsp
Olive Oil
1 tablespoon
Salt, Sea Salt
⅛ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Thinly slice the zucchini using a vegetable peeler so that you have 10 wide strips. Brush a griddle pan with half a tablespoon of olive oil and set over a high heat.Step 2
Add the zucchini strips a few at a time to the griddle pan until char marks appear - this will only take a minute or so.Step 3
Crumble the feta cheese into a small mixing bowl. Roughly chop the sundried tomatoes and mint, then add to the bowl along with the lemon zest, remaining olive oil, salt and pepper. Mix well to combine.Step 4
Divide the feta mixture evenly between the 10 zucchini strips placing roughly a teaspoon full at each end.Step 5
Roll the zucchini strips over and around the filling, rolling them into a tight tube. Serve immediately.
