This simple keto salad is rich with tangy feta cheese, tender baby spinach, tart cranberries and crunchy pine nuts, drizzled with a sweet balsamic dressing.

Feta Cheese

Baby Spinach
2 cup
Pine Nuts
1 tablespoon, whole pieces
Reduced Sugar Craisin Dried Cranberries by Ocean Spray
1 tablespoon
Olive Oil
1 tablespoon
Balsamic Vinegar
½ tablespoon
Basil, Fresh
¼ cup, whole pieces
Salt, Sea Salt

Step 1
Add the pine nuts to a dry skillet over a low/medium heat. Toast gently for two to three minutes until lightly golden.Step 2
Add the spinach and basil to a large serving bowl. Finely chop the cranberries and add to the bowl. Crumble over the feta and pine nuts. Season with salt and pepper and toss to combine.Step 3
Whisk together the balsamic and olive oil and drizzle over the salad. Stand for 10 minutes to allow the spinach to soften in the dressing a little before serving.
