Pitted Kalamata Olives by Mezzetta

Sundried Tomatoes Packed In Oil Drained
4 piece
Boneless Skinless Chicken Breast
2 medium - split
Goat Cheese, Soft
1-¾ ounce
Tomato Paste
1 tablespoon
Basil, Fresh
1 tablespoon
Oregano, Dried
½ teaspoon
Olive Oil
½ tablespoon
Salt, Sea Salt
⅛ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Preheat the oven to 400 degrees Fahrenheit.Step 2
Arrange the chicken breasts between two sheets of plastic wrap and flatten with a meat mallet or rolling pin to an even thickness - about 1/2 inch.Step 3
Divide the tomato paste between the two chicken breasts. Spreading evenly across the surface.Step 4
Sprinkle over the dried oregano and crumble over the goats cheese.Step 5
Roughly chop the tomatoes and slice the olives, arrange over the top of the chicken breasts.Step 6
Season with a little salt and pepper and drizzle with the olive oil. Transfer to the oven for 20-22 minutes to bake until the chicken is completely cooked through and the cheese has melted. Scatter with fresh basil to serve.

My husband and I LOVE THIS RECIPE!!! I’ve made it several times and enjoy it every time! Thanks for this recipe! This last time instead of the olive oil I drizzled it with some of the oil from the sun dried tomatoes and it was awesome!
