Recipe Steps

1 h 5 min

  • Step 1

Preheat an oven to 375 degrees. In a large bowl, combine by hand or with a spoon the ground round, salt, pepper, paprika, mustard powder, parmesan, and egg yolk.
    Step 1
  • Step 2

Spray a 9-inch pie tin with pan spray (a regular loaf pan will work here too, but a round pan is better for the “cheeseburger” look). Press HALF of the meatloaf mixture into the pan like you would a pie crust with a shallow center and slightly higher edges.
    Step 2
  • Step 3

Lay down 3 slices of American cheese in the center of the meatloaf base (a mild cheddar is okay to use, if you don’t have access to American cheese). Also, lay down the yellow onion, sliced into rings, and the pickles, sliced into round pieces.
  • Step 4

Lay the final 3 slices of cheese over the onions and pickles. Then, press the remaining meatloaf mixture over the top of the filling. It may be easier the press the second portion of meat into a wide disc first, then transferring it over the top of the cheeseburger filling. Press the edges of the loaf together around the entire circumference to seal in the filling.
    Step 4
  • Step 5

In a small bowl, mix together to mayo and ketchup. Spread this sauce over the entire exposed surface area of the cheeseburger meatloaf. This also helps seal in the filling. Bake the loaf, uncovered, for 45 minutes.
    Step 5
  • Step 6

Let the meatloaf cool for up to 10 minutes before slicing into 8 slices. Enjoy your gooey cheeseburger meatloaf!
    Step 6

Left out pickles and cooked 35 mins in a dark bread pan. Turned out great!

Made this recipe with 85% lean ground beef, added some yellow mustard instead of mustard powder (didn’t have any) and mixed mayo, mustard and ketchup for the topping. I used a little more than a lb of beef and baked for 35 minutes. My family loved it! Great easy recipe and wasn’t missing the bun.

I found this recipe to be okay. I prefer a simple bunless burger.

This was delicious. I used 92% beef, not sure what % ground round is. Follwed recipe. My very picky husband said multiple times how much he enjoyed it. I couldn't tell him it was healthy or he wouldn't want it. 😁 I will definitely make again! PS I only cooked about 35 minutes. Probably on needed 33 or so. Served with steamed broccoli and side salad.

1st: WOW! Delicious and will be making this a regular meal. 2nd: I made this with 3 lbs of 80/20 ground beef. Cut in half for top and bottom. Forgot to add mustard powder, so I just squeezed two thin rings of yellow mustard around the bottom layer before adding top layer. I used Irish cheddar and mozzarella. I baked this in my cast iron pan. 3rd: There was A LOT of grease. Changes I may make next time (too keep my roommate happy) is switch to 85/15, stick to the cheddar instead of American cheese and cook for 30 minutes. P.S. I may have to add more pickles and onions and up the carb count! 🤭

This would be awesome if my first attempt didn't dry it right out because the cook time listed is way to long.

Really good. I didn’t put in the onion. Because I used dried onions in the meat. It was delicious. Had enough portions for several meals.

So good! The serving is on the small size but it just made me eat slower and savor every bite. I made a cpl changes of my own. Instead of beef I used Impossible "beef" and I opted to use Worcestershire sauce instead of ketchup. I also left out the American cheese and pickles. In the end I suppose it was more like traditional meatloaf than a cheeseburger meatloaf but it was absolutely delicious. Already added to my Favorites.

This meal was so good! We used a mix of ground beef and ground pork and made a double batch. We cooked it in our cast iron skillet, and it turned out perfect! We will definitely make this again!

Made a couple variations of this: Beef burger minus the cheeses, with sharp white Tillamook cheddar instead Lamb burger minus the cheeses, with feta instead and different spices. Both were delish. Definitely a staple in this house.

This was really great and flavorful. I only put three slices of American cheese on it and forgot the other three by accident. But it all worked out for the best. It really didn’t need it. I think also, next time I’ll cook it in a pan so the grease will go away from the meat. It just kind of sucked into the beat. Both my husband and I loved it !

Man, this was SO good! I did not use the spices suggested. I used 2 tsp of Whiskey Bent BBQ's The Rocks Dry Rub seasoning. This is what my husband uses for burgers, so I figured why change it for this dish? It's supposed to taste like a burger, right? Also, I use colby jack cheese because it's superior to American cheese. Just sayin'. I didn't read the directions correctly & instead of adding a second layer of cheese in the middle, I added the last 3 slices of cheese on top of the meatloaf in the last 10 minutes of baking. The cheese melted within 5 minutes, but giving it an extra 5 browned it. This is going on my favorites list. For those who thought it was bland, try this!

I make them 3 at a time and freeze 2 for future weeks. The first time I made three and had not froze it yet… my husband ate an entire one ….he said it was so good he kept going back for another piece. 🤨

Is this really 8 servings? According to the recipe, two slices was 9 ounces. I weigh my food and that equates to half of the loaf (9-inch round pan) after cooked. Probably overate on this one; maybe they meant 9 ounces precooked, but I didn’t want to weigh raw meat. Four stars for yummy taste, two for recipe clarity.

One slice is 1/8th of the recipe. Probably about 2 ounces. Since recipe call for 16 ounces of beef.
