These Keto s’mores are the perfect sweet treat to share this summer. This recipe consists of Keto marshmallows and sugar-free chocolate sandwiched between freshly baked Keto graham crackers. You can prepare this treat in the comfort of your home and toast the marshmallows in the oven instead of on an open fire. These s’mores will impress kids and adults, whether on a Keto diet or not!
What type of marshmallow can you use for this recipe?
Any Keto-friendly marshmallows will work in this recipe. You can find plenty of sugar-free options in the grocery store or make your own from scratch. However, not all marshmallows can be toasted since not all sweeteners caramelize at high temperatures. Choose a brand prepared with allulose, erythritol, monk-fruit & allulose blend, or Swerve. You can use our recipe for Keto marshmallows to avoid any unnecessary additives and preservatives, but keep in mind that these marshmallows won’t get that golden color since they’re prepared with xylitol.
How to make Keto graham crackers?
These Keto graham crackers are to die for and are amazing on their own. They are prepared using almond flour, golden erythritol, cinnamon, an egg, melted butter, vanilla extract, xanthan gum, baking soda, and a pinch of salt. Mix these ingredients in a bowl until a dough forms, then roll it out to ¼ inch thick. Cut into 10 rectangles and prick them with a fork. Bake until golden and crispy, and enjoy them in any recipe you prefer or just as they are.
Can you prepare this recipe ahead of time?
While you can prepare these s’mores in advance, it isn’t the best way to eat them. S’mores are best when the marshmallows are warm and soft, and the chocolate is oozing. You can, however, prepare the crackers in advance, then assemble them right before serving.

Step 1
Preheat your oven to 300F/150C and line a baking sheet with parchment paper. Add the almond flour, cinnamon, erythritol, baking soda, xanthan gum, and salt to a large bowl. Whisk to combine.Step 2
To another bowl, add the melted butter, egg yolk, and vanilla extract. Whisk until combined. Pour the wet ingredients into the dry and mix until a dough forms.Step 3
Place the dough onto a large piece of parchment paper and top with another piece of parchment. Roll out the dough into a rectangle ¼ inch thick.Step 4
Cut the dough into 10 rectangles measuring 2x5 inches (5x10 cm). Prick the crackers using a fork. Transfer the rectangles to the prepared baking sheet.Step 5
Bake for 20 minutes until golden around the edges. Take the tray out of the oven, split the marshmallows in half, and place them over half the crackers. Top the marshmallows with the chocolate pieces. Broil for a couple of minutes until the chocolate melts, and the marshmallows are slightly toasted.Step 6
Place the remaining crackers over the chocolate pieces. Serve warm.
