These meals work great to meal prep as they can be eaten cold from the fridge. They also work great as a savory breakfast, a quick lunch or an easy dinner. There are so many tasty parts to this plate, I think you will be quite satisfied and pleased! It’s definitely a meal to look forward to. I like to use mini mozzarella balls for this!

Ingredients

  • Arugula

  • Mozzarella Cheese

  • Walnuts

    Walnuts

    ¼ cup, chopped

  • Sour Cream

    Sour Cream

  • Crushed Red Pepper Flakes by 365

Recipe Steps

  • Step 1

    Add arugula to a plate and top with olive oil and sprinkle with a little salt for flavor.

    Fold the salami slices in half and shingle them side by side. Add to the plate next to the greens.
  • Step 3

    Add the mozzarella balls and drizzle with a little olive oil, red pepper flakes and parsley. Add the olives in a small pile to the plate as well as the walnuts.

    Add a dollop of sour cream to the plate and enjoy!

      Olive oil has no carbs. Mozzarella has plenty. Walnuts even more.

    Love meals Like this. I used Peloponnes spread for the olives. Mixed it and the sour cream together and put on my meat “crackers”. Topped with salad mix and cheese. Delicious!

      Omg this turned out so good! I also added pesto. The arugula with olive oil salt and chilli flakes gave a unique and delightful taste. A must have!

        Instead of walnuts could pickled cauliflower be substituted? If so what would be the measurement of cauliflower to keep the carb count the same for this? Thanks!
