Low Carb Crunchy Brussels Sprouts + Nut Salad
This salad is so crunchy and lemony. I love how easily this salad comes together and because Brussels sprouts are a tougher leaf, it can be dressed with the vinaigrette ahead of time making getting it to the dinner table super quick (simply pull it out of the fridge!). Feel free to use any nuts you like, but I used roasted sunflower seeds and pepitas!

Ingredients
Brussels Sprouts, Raw
1 pound
Extra Virgin Olive Oil
6 tablespoon
Lemon Juice, Fresh
4 tablespoon
Seeds Pumpkin And Squash Seed Kernels Roasted With Salt Added Pepitas
¼ cup
Sunflower Seeds
¼ cup, whole pieces
Kosher Salt by Morton

Step 1
Slice brussels sprouts very thin on a mandolin, about ⅛” thick. You can do this with a very sharp knife too.Step 2
Then mix together the olive oil, lemon juice and salt. Pour the dressing onto the sprouts and mix it all well.Step 3
Add the nuts and mix again.Step 4
Let it sit in the fridge for 4 hours to help soften the brussels sprouts or serve it right away for a crunchier salad.

Shaved Brussel sprouts are nice & thin when done on a mandolin, please use the protective gloves (sold on Amazon)…made the recipe tonight for dinner as written, delicious & healthy. Thank you for sharing your recipe! I may add roasted pancetta & Asiago cheese for variety at another time.

This also lovely with a dressing of red wine vinegar, soy sauce, chilli flakes, salt and pepper, sesame oil - raw Brussels are so versatile!

Low fat dressing usually have a lot of sugar therefore more carbs. If you want to watch carbs I’d stick with the oil. Just sayin..

Would probably go with a bit of dijon, maybe egg yolk something to emulsify the whole thing and add some thickness fatiness. A low fat bought vinegrate could work too if you want those calories down.

Too much salt and a little to much lemon juice. Might be good with less of those.

What it you want omit the sunflower seeds. How can you adjust the recipe?

seeds or other is for taste. almost any recipe (except for baking) can be adjusted to taste!

You can copy the recipe in the app and remove the sunflower seeds to change the calorie per serving! Click the three dots in the top right and click copy to my foods. Go to my foods and edit the recipe by deleting the sunflower seeds.

This was refreshing I may use a little bit less lemon juice and salt next time but even my kids liked this.
