  • Cauliflower Rice

  • Step 1

    Heat the olive oil in a skillet over a medium heat and add the ground beef, cooking until browned all over.

    Thinly slice the mushrooms, garlic and scallions and add to the pan with the browned beef and stir fry for 2-3 minutes to soften. Add the cauliflower rice and stir well to combine.

    Make a well in the middle of the beef mixture. Beat the egg and pour into the well. Leave to settle for a moment then use a wooden spoon to scramble into the stir fry until just cooked through.

    Drizzle over the tamari sauce and sesame oil and stir well to combine. Scatter with fresh chopped cilantro to serve.

      Really a good and fast dinner. I wanted more crunch and color, so I added 1/4 cup diced celery and 1/4 cup diced red pepper. I also added white pepper for a little kick

        Very tasty. I used frozen cauliflower rice and cooked it in the microwave before mixing it in. I added some fresh lime juice as well. Gave it a little zing. Will make this again.

        Simple but very tasty. We added a little extra Tamari sauce. We were apprehensive about the cauliflower rice, but it was very good.
