Keto Blackberry Chia Jam

Making Keto jam is much easier than you think. This blackberry jam has all the flavors of a regular jam without the unnecessary carbs and sugar. It is prepared with chia seeds, which boost fiber and nutrients. This recipe requires four ingredients and just 15 minutes of your day and will last in your fridge for up to a week.

Are blackberries good for a Keto diet?

Blackberries are the perfect fruit to include in a Keto diet. They have a low net carb count compared to other fruit; One cup of blackberries has just 6g of net carbs and a whopping 8g of fiber, keeping you full for a long time. This berry is also rich in nutrients like potassium, vitamin C, and vitamin K. You can have fresh blackberries raw as a snack or include them in Keto blackberry recipes like muffins, scones, smoothies, and salads, etc.

How is this jam different from a regular jam?

Regular jams are prepared by cooking fruit with a lot of sugar until pectin is released and the mixture thickens to a spreadable consistency. Pectin is a soluble gelatinous fiber naturally present in fruits, and it acts as a setting agent for jams and jellies. However, pectin is insufficient to thicken jams to the desired consistencies; thus, sugar is added as a secondary thickening agent. In this Keto blackberry recipe, chia seeds thicken the jam, and erythritol is added for sweetness. This jam has a very similar consistency to traditional jam and can be used similarly.

How can you serve this Keto blackberry jam?

Spread it onto Keto toast with butter or peanut butter for a quick sweet breakfast, or serve it with scones for an afternoon snack. You can also use this jam to make ice cream, thumbprint cookies, pies, or cupcakes.

Ingredients

  • Blackberries

  • Lemon juice

    Lemon juice

  • Erythritol Granulated

    Erythritol Granulated

    2 tbsp, whole pieces

  • Step 1

    Add the blackberries and lemon juice to a saucepan and place over medium heat. Mash the blackberries as they heat and bring to a simmer. Add the erythritol and continue mashing and stirring until smooth.

    Take the saucepan off the heat and stir in the chia seeds. Let sit for 10 minutes or until the chia seeds have swelled. Transfer to a jar.

    Let cool entirely before securing the lid on the jar. Store in the fridge for up to a week. Serve as desired.

    The carbs for this recipe doesn’t make sense???… if you input the ingredients to the calculator separately , 1cup of blackberries is 6 grams and 0 grams for the chia, so why is this recipe showing over 13 grams of carbs for 1 cup???… the recipe for blackberry chia pudding is very similar, and is only aprox 6 grams carbs for 1 cup of pudding???… maybe because the jam is cooked?… correct me if I’m wrong

      Hello @Meu2kids, The volume of whole blackberries per cup is not the same as mashed blackberries. For example, mashing/blending 1 cup of whole blackberries would yield 2/3 or 3/4 cups. Moreover, cooking the jam will reduce the water content, further decreasing the volume while concentrating the carb content. Hope this makes sense :)

      Can you store for longer if you seal the jar like you can with traditional jam?

        My father-in-law was diabetic,. My MnM made sugar free jam and jelly every year. Check with your local extension office to see how to preserve it.

        I suspect not as it is the sugar that preserves traditional jam. It could be frozen as an alternative.
