Peel and roughly chop the avocado flesh and add to a food processor along with the lemon juice, basil, garlic, pine nuts and salt. Blend to combine.Step 2
Add the olive oil and blend again until you have a semi smooth but thick paste.Step 3
Slice the cucumber into 12 even discs.Step 4
Divide the avocado pesto evenly between the 12 discs to serve.
