Keto Sheet Pan Eggs and Bacon
Make these Keto sheet pan eggs and bacon with bell pepper rings when you’re low on time for breakfast! This is also an easy breakfast recipe to make if you want to serve a family or multiple people. Just cook all your servings on one big sheet pan! Green bell pepper is sliced into rings and arranged on a sheet tray. Then, just crack eggs right into the bell pepper rings! They’ll bake inside the bell peppers, making an easy breakfast for you to cut into with a knife and fork. Don’t forget the bacon! Strips of bacon cook up crisp on the sheet pan as well.
Are bell peppers Keto?
Bell peppers can be eaten on the Keto diet, as long as they’re portioned and eaten in moderation. However, this goes for all Low Carb veggies. One thing to remember is that different colored bell peppers have different amounts of carbs. Green bell peppers have the least amount of carbohydrates. Yellow, orange and red bell peppers have increasingly more carbs respectively.

Turn on an oven to preheat to 375 F (190 C) and spray a large non-stick sheet tray liberally with cooking spray. Slice ½”-thick rings from one whole green bell pepper (1 ring per serving). It’s important to make clean, even slices. Arrange the bell pepper rings on the sheet tray, and press them down gently so the peppers have some suction with the cooking spray on the pan.Step 2
Crack one egg into each bell pepper ring. If some of the whites leak out the bottom, this is okay. Sprinkle salt and pepper in pinches over each egg. Lay whole slices of raw bacon along the edges of the pan around the bell pepper rings and eggs.Step 3
Place the tray of eggs and bacon in your oven, and bake for approximately 8-10 minutes. You can cook on the lower end of time for over-easy eggs, or cook for longer to cook the eggs to your preferred doneness. Use a spatula to lift the eggs and bell pepper rings off the tray onto a plate, as well as the bacon.
