Step 1
Preheat oven to 180C/350F. Finely dice the onion and thinly slice the garlic, set them aside. Cut the potatoes into quarters and transfer to a baking dish.Step 2
Season chicken thighs with salt and pepper. Heat a nonstick pan over medium-high heat. Once hot, sear the chicken pieces on both sides until golden, then transfer to the baking dish.Step 3
Add the butter to the pan. Once melted, add the onion and garlic and sauté for a few minutes until softened. Add the crushed red pepper and saute for a few seconds.Step 4
Add the white wine and let it simmer out. Add the chicken broth and lemon juice and bring to a boil. Transfer the contents of the pan to the baking dish.Step 5
Cover the baking dish with aluminum foil and transfer to the oven. Bake for 30 minutes, then remove the foil and mix in the xanthan gum and green peas.Step 6
