    Preheat the oven to 325 F/ 180C. Line a baking sheet with parchment paper. In a medium-sized bowl, mix the sunflower seeds, sesame seeds, pumpkin seeds, chia seeds, and flaxseeds.

    Transfer one cup of the seeds to your food processor and blend until fine. Add the pumpkin puree and blend until well combined. The mixture should be thick and sticky.

    After mixing the 1/3 cup of pumpkin purée with the seeds, I could tell that the mixture was very dry. I added more pumpkin purée (used about 2/3 of the whole can) and they came out great. I realize this skews the nutrient counts, but it’s worth it to me to add a couple more carbs and a handful of calories for a more delicious cookie. I also used powdered monk fruit in place of allulose.

      I put the pumpkin mixture from the food processor back in the bowl with the rest of the seeds per instructions. The cookies turned out very brittle and fell apart after they cooled. The flavor was also very bland.
