This simple green salad is loaded with flavor and texture from peppery arugula, crisp scallions, creamy avocado, cool cucumber, crunchy pumpkin seeds and golden fried halloumi.

  • Step 1

    Slice the halloumi into two even strips. Arrange in a dry skillet over a medium/high heat and cook for a few minutes on each side until golden.

    Whilst the halloumi is cooking, thinly slice the avocado, dice the cucumber and finely slice the scallions. Add to a large serving bowl along with the arugula. Season with a little salt and pepper and toss to combine.

    Add the olive oil, lime juice and zest to a small bowl. Stir to combine.

    Top the salad with the cooked halloumi and scatter over the pumpkin seeds and fresh cilantro. Drizzle with the lime dressing to serve.
