Keto Vegan Tofu Ground Beef

Using this vegan Keto ground beef recipe as a meal prep staple will make your time in the kitchen so much easier and convenient. There are so many things you can do with this recipe. You can incorporate this recipe into a larger main course, add it to basic salads and sandwiches, or serve it as is with a vegan Keto side dish. The ground tofu is full of flavor, which you can intensify with marination or adding more seasonings to your taste. For storage, keep the finished ground tofu in air-tight containers in your refrigerator for up to 5 days. You can simply reheat it in your microwave or add it to skillet meals.
Suggestions For Use
Before cooking the tofu, you can add other ingredients to turn the ground tofu mixture into a meatloaf or meatballs. Add nutritional yeast or ground almonds to the mixture as a binder before forming it in a pan or dish. After cooking the ground tofu as described in the directions, you can add it to simple meals for more protein and calories. Top off your taco and burrito bowls with the ground tofu, or add it to real Keto tacos made with Keto taco shells. Add a scoop to your salads or on top of cauliflower rice.
Do I Have To Use Extra Firm Tofu?
If you don’t have access to extra firm tofu, you can use regular firm tofu as a substitution. In this case, you may need to cook it for longer in your pan and you’ll need to be more gentle when working with the tofu. Extra firm tofu is the best choice because it still has some integrity after it’s cooked. If you intend to use this recipe to make other Keto recipes, like meatloaf or burgers, use extra firm tofu.

Step 1
Start with a full block of tofu, and remove as much excess water as you can from it without breaking it. Use paper towels to absorb liquid from the sides and top. Gently press down on the top of the tofu to continue releasing liquid until most of it is gone. Then, use your fingers to break the tofu up into crumbly pieces that resemble “ground beef” in a large mixing bowl. If excess liquid pools at the bottom of the bowl, drain it off when you’re done crumbling the tofu.Step 2
Season the ground tofu with salt, pepper, cumin, onion powder, garlic powder, paprika, and worcestershire sauce. For the rest of the recipe, you can use a utensil to mix the tofu in the bowl. At your discretion, you can cover and store the tofu in your refrigerator to marinate, but you may continue on immediately to cook it. Heat the olive oil in a wide pan over high heat. Once the oil is hot, add the seasoned tofu to the pan, and stir it around briefly in the oil.Step 3
Let the tofu cook on one side until it starts to char and crisp up to mimic grilled ground beef. Once it’s cooked, start stirring and rotating the ground tofu around in the pan as it continues cooking on high heat. If you like the crispy texture, you can continue the process of letting it cook for longer before stirring it. Adjust the heat as necessary to complete cooking the ground tofu to your liking - about 10 minutes. The suggested serving is about 2 ounces of prepared ground tofu.

I fancied something different this morning for breakfast so gave this a try. Not being vegan but love tofu I added a fried egg that was scrambled into the tofu after it was cooked with some crispy smoked bacon bits... Deeelish, will definitely have again ;-)
