Can I Use a Different Cut of Chicken?
We have used skin-on thighs for this simple Keto chicken recipe. If preferred, you could use the dry rub on an alternative cut of skin-on chicken. Breasts, wings, and drumsticks would all be great alternative options. Please be sure to adjust your macros and cooking times as needed to account for different ingredients used.
What Is a Keto Smokey Coffee Rub?
Our dry rub is prepared with instant coffee powder, smoked paprika, garlic powder, onion powder, cinnamon and cumin. The rub provides a savory and smokey seasoning for meats and makes a great alternative to traditional spice rubs. It’s also a great alternative option for rubbing and marinating BBQ or slow-cooked meats.

Preheat the oven to 400 degrees Fahrenheit and lightly oil a shallow oven tray. Arrange the chicken pieces across a clean work surface. Drizzle the olive oil over the chicken thighs and season with salt and pepper. Rub the oil into the skin and meat.Step 2
Sprinkle the smokey coffee rub over the chicken thighs. Use your hands to rub the seasonings evenly all over the meat and skin on both sides. You may use more or less rub as desired to suit your tastes.Step 3
Arrange the chicken pieces in a single layer across the lined oven tray. Transfer to the oven and bake for 25-35 minutes or longer as needed. The chicken should be entirely cooked through, juices running clear with no pink remaining. The skin should be crisp and golden. Serve hot with your preferred low carb sides.
