Keto Instant Pot Chicken Ginger Bone Broth Soup

This soup is one of my staples during the colder months. The hot broth and ginger are so warming that it really works to clear the sinus and keep you feeling cozy and refreshed! I like to serve this soup with fish sauce on the side with chopped Thai chilies. I like to dip the chicken breast into this spicy, salty sauce. It’s the best combo! Feel free to sub out the fish sauce for soy sauce if you do not like fish sauce.

  • Step 1

    Slice ginger into thin julienned pieces. You do not have to remove the skin, but you can if you would like it. Add the chicken and ginger into the Instant Pot. Add about 4 quarts of water. Set pressure to HIGH and cook for 18 minutes.

    Once 18 minutes have elapsed (let the pressure come down naturally as the high liquid content with the soup will sputter if you use the quick release vent), remove the chicken breast from the soup and separate the meat from the bone.

    This should be very easy to do. Return the meat to the pot.

    Serve soup hot and serve additional fish sauce in small dipping bowls adding chopped Thai chilies, if you like heat!

    I'm going to use a roasted chicken and then pull the meat off and roast the bones with a little salt and pepper.

      You have to be kidding! How dare you name this a bone broth. May I suggest returning the bones (add more bones from you supply in the freezer-you do keep them right?) and cooking on high pressure for an hour and a half. Leave to release naturally. Strain through a reusable coffee filter or cheese cloth and chill in the fridge. Use within a week.

        This is not bone broth—just broth. Bone broth would mean cooking bones and water in instant pot for at least 3 hours to get all the good collagen out of the bones!
