How to store these gluten-free flax flatbreads?

These flatbreads can be made ahead of time to be enjoyed throughout the week. To store, place the flatbreads in an airtight container lined with parchment paper. Ensure to place parchment paper in between the wraps to prevent them from sticking when stored. Alternatively, this gluten-free Keto bread can be stored in the freezer for up to a month. To freeze, place the flatbreads with parchment paper in between them in a zip lock bag and freeze.

Recipe Steps

    To a pot over medium heat, add 1 cup of water and bring it to a boil. Turn off the heat then add the ground flaxseeds. Stir using a spatula until the mixture thickens and starts to form a ball of dough. This process will take approximately 1 to 2 minutes.

    Transfer the dough to a cutting board and cut it into 8 equal pieces. Cut two pieces of parchment paper and place a dough of ball in between the two pieces of parchment paper. Flatten the dough with your hands and begin rolling with a rolling pin to form a round-shaped flatbread about 2mm thick. Repeat the same process for the rest of the dough balls.

    Place a non-stick pan over medium heat. Then, place the flax flatbread on the pan and cook for about 2 minutes on both sides until the wraps are dry but still malleable. If they begin to stick, lower the heat to low and use a silicon spatula to flip the flatbread gently.

    Cover the cooked flatbread in a kitchen towel to prevent them from drying and cracking. Serve them as tacos with sauces, soups, or even curries. Feel free to cut each tortilla into 8 pizza-like slices and bake for a crunchy but healthy snack.

    They were so simple to make. Although they are plain with no flavor it worked well with my dish. I made a breakfast bacon, egg and cheese wrap with a little mayo. Excited to try these with other recipes, in addition to using some seasoning in the dough mixture.
