  • Step 1

    Preheat an oven to 275 degrees. Prepare 9 cupcake liners in 9 muffin tins.

    Bring all your cream cheese to room temperature. Whip the first amount of cream cheese with a paddle attachment on a stand mixer until the cream cheese is very soft and creamy, with almost a fluid texture.

    Mix in the eggs, vanilla, and stevia. Scrape down the bowl to incorporate all the ingredients.

    Scoop the batter into each cupcake liner, filling them about ¾ of the way up.

    Mix the second amount of cream cheese in the stand mixer to the same consistency. Then, mix in the cinnamon. Divide the cinnamon mixture over each cupcake liner of cheesecake batter, and swirl it in with a toothpick. Some of the cinnamon mixture will sink, but this is okay.

    Prepare a Bain Marie by filling a large sheet pan with about 1-inch of water. Place the muffin tray of cheesecake batter in the water, and set the construction on a low rack in the oven.

    Bake the cheesecakes for 55 minutes until a toothpick comes out clean. Let the cheesecakes cool before enjoying!

    These turned out nothing like cheesecake. Cinnamon batter never swirled. Way too many eggs. Did a second batch with just one egg and they came out better but not worth the effort. Will not make these again.

          I followed the recipe and even added a little extra sweetner but these do not taste like cheesecake, and you can hardly taste cinnamon

          Ewww. My husband and I followed the recipe exactly and these were awful. Very strong egg taste with no sweetness what so ever. We ended up throwing them all away.

          I was not a fan of these at all. The cinnamon mixture didn't swirl for me, it just broke up in the middle of the muffins and it made the centers bitter. I made a few without the cinnamon swirl, and I didn't really like those either. I ended up pawning off the rest onto relatives... Who didn't have anything positive to say about these either.

              It was great, family who didn't know it was keto/low carb were asking for the recipe. Use Swerve instand of stevia and would would swear you were eating regular cheese cake.

                  Substituted stevia with 1/8 cup swerve. It made 11 servings for me. Delicious
