Recipe Steps

Step 1
Chop the pumpkin into small cubes. Add one tablespoon of butter to a skillet and plce it over medium heat. Add the pumpkin and sauté for 5 minutes until soft.Step 2
Add the ground beef. Cook for 3-4 minutes until browned and no longer pink. Season with salt and pepper and take the skillet off the heat.Step 3
To a small pan, add ½ tbsp butter and place it over medium heat. Crack the eggs and cook for 3-5 minutes until the whites ate cooked but the yolks are still runny. Transfer the cooked eggs to a plate and repeat with the remaining butter and eggs.Step 4
To serve, divide the beef hash into two plates. Add 2 sunny-side-up eggs to each plate. Garnish with chopped parsley and serve.

This was a wonderful recipe, very different from what I normally eat, so was a welcomed change! Will make again, maybe even try to sub chorizo for the ground beef.
