Cod, Cooked From Fresh
2 fillet - each 4 ounce raw
Olive Oil
2 tablespoon
Pine Nuts
1 tablespoon, whole pieces
Parmesan Cheese
1 tablespoon, grated
Garlic
1 clove
Lemon Peel Or Zest Raw
1 tsp
Basil, Fresh
⅔ cup, whole pieces
Lemon Juice
½ tablespoon
Salt, Sea Salt
⅓ teaspoon
Walnuts

Step 1
Preheat the oven to 400 degrees Fahrenheit.Step 2
Add the basil, pine nuts, lemon zest, parmesan, garlic and salt to a food processor. Blend to combine.Step 3
Add the lemon juice and olive oil to the food processor and blend to combine.Step 4
Arrange the cod fillets across a shallow baking tray and coat the top of each with the pesto.Step 5
Crush the walnuts and sprinkle over the top of the pesto coated cod.Step 6
Transfer to the oven to bake for 12-15 minutes or until the fish is cooked through and the walnuts are golden.

We all loved this dish! I didn’t have the pine nuts, so we went without. The walnuts on top added just the right amount of extra texture ☺️! Thank you, this is a keeper.
