Keto Cinnamon Crunch Chicken Thighs
These deliciously tender Keto chicken thighs make a great low carb lunch or dinner option. Our Keto chicken recipe is prepared with skinless and boneless chicken thighs, ground almonds, crunchy pecans, warming cinnamon and beaten egg. The chicken is coated in the beaten egg, then a layer of crunchy cinnamon breading before being oven baked until crisp and golden.
Can I Use Different Nuts?
We have used chopped pecans as they perfectly complement the sweet and warming cinnamon. If preferred, you could use an alternative Keto-friendly chopped nut. Macadamia nuts or walnuts would make a great substitution. Simply use in the same quantities and as directed. Please be sure to adjust your macros to account for any changes made to the recipe.

Chicken thigh, skin removed before cooking

Step 1
Preheat the oven to 400 degrees Fahrenheit. Crack the egg into a small bowl and beat until smooth. Add the ground almonds, chopped pecans, cinnamon, salt and pepper to a second bowl. Mix well to combine. You may add more or less seasoning and cinnamon to taste.Step 2
Take one of the chicken thighs and coat it completely in beaten egg. Then, dredge the chicken in the cinnamon crumb until liberally coated all over. Repeat this process with the remaining chicken thighs until they are all coated in the breading.Step 3
Arrange the breaded chicken thighs across a shallow oven tray. Transfer to the oven to bake for 20-25 minutes or until entirely cooked through and the crumb is crisp and golden. Serve with your preferred Keto sides.

This is my favorite CM recipe! I’ve made it 3 times. I triple the recipe and get a value pack of thighs so I can have lunch in the freezer for over a week!
